Recipe : Flourless Double Chocolate Brownies

What’s a health and wellness blog doing promoting brownies, you ask? Well, sometimes health and well being should include a little indulgence and things that make you happy. And this recipe is full of wholesome ingredients with nutritional value!

Finally, this recipe has real soul. Recipes are a tangible form of your love and time that you can use to nurture yourself or share with others.

Ingredients:

  • 6 Tbsp organic coconut oil: We like Nutiva brand, which has a a very mild to undetectable coconut flavor. Coconut oil is known as a “superfood”, and is a very healthy type of fat for your body. Google “coconut oil nutrition”: many studies out there suggest that it helps the body burn fat, nourishes the brain, fights off infections and keeps you satisfied and eating less overall.
  • 2 large, room-temperature organic, free-range eggs: We prefer Happy Eggs or Vital Farms. We do recommend eggs (from humane sources) as a very valuable nutrition source. You could try a vegan egg substitute but we won’t be able to vouch for the results/flavor.
  • 6 oz semi-sweet organic chocolate chips: We like Sunspire Fair Trade Organic chips.
  • 1/2 Cup Organic Coconut Sugar: We use this one from Viva Labs. Coconut sugar comes from the sap of the cut flowers of the coconut palm. It has a more robust, caramel taste than sugar, so you can cut back on the amount of sugar you would typically use. It also has a lower glycemic index than regular table sugar. We would call this type of sugar slightly more nutritious and slightly more “healthy”, but at the end of the day, sugar is sugar…which can be addictive. So take it easy. Since these brownies have very rich and satisfying coconut oil, you’ll be able to stop at a couple of them pretty easily.
  • 2 tsp vanilla extract
  • 1/4 Cup organic unsweetened raw cacao powder: our favorite one is from Healthworks. Raw cacao powder contains more than 300 different chemical compounds and nearly four times the antioxidant power of your average dark chocolate – more than 20 times than that of blueberries.
  • 3 Tbsp arrowroot powder: a natural thickening agent.
  • 1/4 sea salt: We prefer Redmond’s Real Salt, chock full of minerals.
  • 1/2 chopped organic walnuts: Walnuts are rich in omega-3 fatty acids, vitamin E and minerals like manganese, copper, potassium, calcium, iron, magnesium, zinc, and selenium.

Instructions:

  1. Preheat oven to 350F and prepare an 8×8 baking pan by spraying it with natural coconut oil spray.
  2. Add coconut oil and chocolate chips to a small saucepan set over low heat. Be sure to have a heat-resistant spatula ready. Stir until oil and chocolate have melted before removing from heat and setting aside to cool slightly.
  3. Using a mixer, beat together eggs, sugar, and vanilla extract until smooth and pale, about 2 minutes. Add melted chocolate mixture and mix until well combined. Reduce speed to low and add cocoa powder, arrowroot powder, and salt, mixing until well combined and scraping down the sides of the bowl as necessary. Batter should be thick and smooth.
  4. Pour batter into prepared pan, spreading it evenly with a greased spatula. Sprinkle your chopped walnuts evenly across the top. Bake for 25-30 minutes, until center is set. Remove from oven and let cool in pan for about 15 minutes before removing and transferring to a wire rack to cool completely. Cut into squares and serve.
