Ditch the bottled salad dressing!
One of the quickest and easiest salads you can make is this zingy Lemon Arugula Salad.
This simple, fresh dressing provides the perfect balance to the slightly bitter, peppery taste of the arugula. Tip: you can experience a more sweet and mild flavor to these greens if you can get your hands on some baby arugula.
You can add anything you like to the salad base. In this version, we simply added some seared Albacore tuna (crusted with sea salt and peppercorns) and avocado. Here’s the basic recipe:
juice of half of a lemon
1/2 sea salt
2 tbsp organic olive oil (golden in color, not green; this will have a more buttery taste)
1 tsp zest from the lemon (optional)
You can mix all the ingredients in a small bowl separately from the greens, but you’ll eventually find that you can just “wing it” and toss everything on top of the greens. Using clean hands, toss everything well using your fingers.
