Recipe : Raw, Vegan Blueberry Mousse

Had to share this wonderful dessert recipe made with fresh blueberries, maple syrup and cashews. It’s so simple to make, you won’t believe it. And the taste: spectacular.   You can use any kind of berries, but I really love the blues.  Cashews are a great source of protein, and when soaked overnight, activated enzymes make them much easier to digest.

Here’s the recipe (Makes 3.5 cups):

1 C raw cashews

2 C fresh blueberries

1/4 C water

1/4 C maple syrup

pinch sea salt

Soak the cashews overnight in the fridge.

Drain cashews and place them with all other ingredients in a blender . Blend on LOW, CAREFULLY using a spatula (around the edge and away from the blades!)  to help work the mixture into the blades. Keep it up until everything is super smooth and creamy (several minutes).

Spoon into individual serving bowls, cover and chill for 6 hours.
