Kale Apple Walnut Salad

Kale is one of the darlings of the wellness world, but many are still not quite sure what to do with it besides steaming it.

Here is a very easy recipe that’s reminiscent of Waldorf Salad but much healthier and fresh. The secret to dealing with raw kale is finding a high quality and flavorful oil to massage it with. That’s right! You will be giving your kale a little massage.

Ingredients:

One large bunch fresh, organic curly kale

1 organic Fuji apple, cored and diced

1/2 cup organic raw walnuts, lightly toasted on medium heat in a pan

Roasted Walnut Oil (one of our favorites here)

1 medium raw organic golden beet, shredded

Maldon Flake Sea Salt (buy it here)

1/2 juicy lemon

  1. Strip all the kale leaves off of the tough stems and toss them into a big salad bowl. If you have any really large leaves you can tear them down to be smaller. You can either toss the leftover stems outside for the squirrels, or…we’ve found some dogs/cats like to eat the stems.
  2. Add a small drizzle of walnut oil and the juice of the lemon half to the kale and massage/toss well with clean hands.
  3. Using a box style cheese grater with the largest hole setting, grate as much of the raw golden beet as you can and toss it with the kale. Finish with a few sprinkles of salt flakes and toss again. Finally, add the chopped apple and toasted walnuts.

You’ll be surprised at how fresh and delicious this tastes!  Raw kale has a very mild sweet flavor, and with the added walnut oil it has an appealing fresh and nutty taste. Walnut oil is rich in Antioxidants and Omega-3s.
