Vegan Superfood Pudding

We can’t help it here at Chakra 5…we LOVE chocolate. Come to think of it, who doesn’t love chocolate?

Our latest creation is a Superfood Pudding, completely vegan and packed with nutrients. Not only did this tickle our tastebuds, it made our tummies feel soothed.

The main ingredient is fresh coconut meat, which has lots of Magnesium to help keep you calm and chilled out and has a about a jillion other health benefits!

Add to that cacao powder , a few superfoods like maca and mesquite and a dose of reishi mushroom to boost the immunity, and you’ve got a dessert fit for a superhero!

We like topping it with raspberries and fresh mint leaves, but you can also use cacao nibs, sliced almonds or a dusting of cacao powder.

Ingredients

  • The meat from one fresh young Thai coconut
  • coconut water from the coconut (around 1 cup, depending on the coconut)
  • 1 frozen peeled banana, sliced
  • 1/4 cup raw cacao powder
  • 1 tsp maca powder
  • 1/2 teaspoon mesquite powder
  • 1 tsp reishi mushroom powder
  • pinch sea salt
  • raspberries, fresh mint leaves, cacao nibs, sliced almonds (optional toppings)

Make It

  • combine everything but the coconut water in a high quality blender (such as Blendtec)
  • add 1/3 cup coconut water
  • blend at medium-high speed
  • add a bit more coconut water at a time as you blend if it becomes too thick
  • keep blending and adding water until you reach the right consistency
  • tip: if it is a bit too thin, you can let it chill in the fridge and thicken up
